The food of Route 66 was never fancy. It was born of the Depression, and it was built to do one job: fill a hungry traveler, cheaply, and send them back out the door satisfied.
Up and down the road, in a thousand little diners and lunch counters, the menu ran to the same honest, filling staples. The blue plate special — meat, potato, a vegetable, all on one cheap plate for a fixed price. Chicken-fried steak, a tough cut pounded thin, breaded, fried, and drowned in gravy to make a little meat go a long way. Chili, hash, biscuits, and pie — always pie, because a slice of pie could turn a grim meal into something that felt like hospitality.
This food traveled the same road the migrants did, and it carried the flavors of everywhere it passed through: barbecue in Missouri and Oklahoma, chili and Tex-Mex through the Texas panhandle and New Mexico. Route 66 caught and blended regional cooking the way it caught and blended everything else. What tied it together was the ethic behind it — generous portions, low prices, and a counter stool where a stranger was welcome.
It wasn’t cuisine. It was sustenance with a little dignity attached, served fast to people who had somewhere to be.
The road fed millions of dreams. First, three times a day, it just fed them.
